Hey, I completely forgot about American Thanksgiving yesterday! For lovely readers in the United States – Happy Belated Thanksgiving!
Breakfast – Smorgasbord! Some people ate fried eggs, some homemade nutella and lemon curd, some ripe papaya, some toast.
Lunch – Not really. A few snacks and then we headed out to the dreaded Costco. Girls were excited for all the free samples.
SHOP – We went armed with a list of desirables, including oysters for Lastborn, brie for Paris. We kept an eye on the tally and when we saw that we were going to be over, we put two items back, bringing us in a few dollars under budget. We’re set for the month.
Dinner – Pizza Night! Here is my LAZY recipe for pizza dough for those with a stand mixer (with dough hook). If you have this equipment, you will love this. Mix 2 1/4 tsp yeast and 1 cup warm water in bowl of stand mixer. Let sit 5 minutes. Add in 1 1/4 cups cold water, 2 Tbsp olive oil, 1 tsp sugar, 1 1/2 tsp salt. Add in 5 1/4 cups flour. Mix with dough hook for 8 minutes. Turn off for 2 minutes. Mix again for 6 minutes. Shape dough into a ball and oil. Return to metal bowl and cover with a lid. Refrigerate.
According to Chef Fahbio (who is a certified professional baker), old dough makes better pizza. Make your dough when it is convenient for you and have pizzas 1-4 days later.
Remove from fridge a good hour before baking. Bake pizzas at 450 degrees for 12-16 minutes. Obviously, you will be topping the pizzas with all the flotsam and jetsam your fridge has generated this week. Serve with a green salad and have a wonderful weekend!
